Ingredients
100g salmon (one fillet), diced
75g sweet potatoes, peeled and diced
60g broccoli florets
50g leek, diced
175g low salt vegetable stock
20g mature Cheddar, grated
Knob of butter
Method
- Melt the butter in a saucepan.
- Add the sweet potato and leek and fry for 1 minute.
- Add the stock, cover with a lid and simmer for 5 mins.
- Add the salmon and broccoli and continue to simmer for 4 minutes until cooked.
- Blend for desired consistency.
- Stir in the cheese until melted.
