Ingredients
1 small sweet potato
150g courgettes, grated
40g panko breadcrumbs
25g sweetcorn, roughly chopped
25g Parmesan, grated (or vegetarian alternative)
1 egg yolk
Method
- Preheat the oven to 180C Fan. Line a baking sheet with baking paper.
- Prick the sweet potato and bake in the microwave for 8 minutes until soft. Leave to cool, then scoop out the flesh into a bowl.
- Put the grated courgette into a clean tea towel and squeeze out all of the liquid.
- Place the dry courgette into the bowl with the sweet potato, breadcrumbs, sweetcorn, cheese and egg yolk. Mix well.
- Place a small dinosaur shaped cookie cutter onto the prepared baking sheet. Spoon some of the mixture into the cutter and press out onto the baking sheet to make a dinosaur shape. Repeat with the remaining mixture.
- Bake in the oven for about 15 minutes until firm and lightly golden.
