Veggie Dinosaur Nuggets

Ingredients

  1. 1 small sweet potato
    150g courgettes, grated
    40g panko breadcrumbs
    25g sweetcorn, roughly chopped
    25g Parmesan, grated (or vegetarian alternative)
    1 egg yolk

Method

  1. Preheat the oven to 180C Fan. Line a baking sheet with baking paper.
  2. Prick the sweet potato and bake in the microwave for 8 minutes until soft. Leave to cool, then scoop out the flesh into a bowl.
  3. Put the grated courgette into a clean tea towel and squeeze out all of the liquid.
  4. Place the dry courgette into the bowl with the sweet potato, breadcrumbs, sweetcorn, cheese and egg yolk. Mix well.
  5. Place a small dinosaur shaped cookie cutter onto the prepared baking sheet. Spoon some of the mixture into the cutter and press out onto the baking sheet to make a dinosaur shape. Repeat with the remaining mixture.
  6. Bake in the oven for about 15 minutes until firm and lightly golden.
