Chicken & Veggie Stars

Ingredients

  1. 250g minced chicken
    120g carrot, peeled and grated
    100g button mushrooms, diced
    ½ red onion, diced
    30g Panko breadcrumbs
    40g Parmesan, grated
    1 tbsp fresh thyme, chopped

Method

  1. Preheat the oven to 180°C Fan. Line a baking sheet with non-stick paper.
  2. Mix the carrot, onion, mushrooms and thyme in a food processor for 2 seconds.
  3. Add the chicken, breadcrumbs and cheese. Whiz again for 5-10 seconds until the mixture comes together.
  4. Place a star cutter onto the baking sheet. Fill the star with the mixture.
  5. Press down, then repeat with the remaining mixture to make 20 stars.
  6. Bake for 15 minutes until golden and cooked through.
