Pulled Chicken Burger

Ingredients

  1. 2 small chicken breasts
    1 tbsp ketchup
    1 tbsp hoisin sauce
    1 tbsp soy sauce
    2 tsp honey
    2 Baker Street burger buns

  2. Coleslaw

    ¼ white cabbage
    1 small carrot, grated
    4 spring onions, sliced
    3 tbsp mayonnaise

Method

  1. Preheat the oven to 180C Fan.  Line a baking sheet with non-stick baking paper.
  2. Mix the ketchup, hoisin, soy and honey together in a bowl. Put the chicken breasts on to the baking sheet and spoon over the sauce.
  3. Bake in the oven for about 20 minutes until cooked through.
  4. Using two forks, pull the chicken into pieces and mix with any sauce leftover on the baking sheet.
  5. Mix the cabbage, carrot, spring onion and mayonnaise together in a bowl. Season well.
  6. Lightly toast the Baker Street Burger Buns. Spoon the coleslaw onto one half of the bun. Top with pulled chicken and the remaining half a bun.
