Ingredients
25g butter
1 onion, finely chopped
Small carrot, peeled and diced
2 level tbsp plain flour
350ml whole milk, warmed
40g Parmesan grated
250g skinless cod loin, cut into 3cm chunks
25g peas
2 tbsp chives, snipped
A little salt and pepper
Method
- To make the sauce, melt the butter in a saucepan over a medium heat, then add the onion and carrot and saute for 8 minutes until just soft. Stir in the flour then gradually stir in the millk.
- Once all the milk has been incorporated, bring the sauce to the boil and cook, stirring until thickened.
- Stir in the chunks of cod and simmer gently for 2-3 minutes.
- Add the peas and Parmesan and simmer for 2 minutes. Add the chives and serve.
