Cod in a Cheesy Sauce with Carrots & Peas

Ingredients

  1. 25g butter
    1 onion, finely chopped
    Small carrot, peeled and diced
    2 level tbsp plain flour
    350ml whole milk, warmed
    40g Parmesan grated
    250g skinless cod loin, cut into 3cm chunks
    25g peas
    2 tbsp chives, snipped
    A little salt and pepper

Method

  1. To make the sauce, melt the butter in a saucepan over a medium heat, then add the onion and carrot and saute for 8 minutes until just soft. Stir in the flour then gradually stir in the millk.
  2. Once all the milk has been incorporated, bring the sauce to the boil and cook, stirring until thickened.
  3. Stir in the chunks of cod and simmer gently for 2-3 minutes.
  4. Add the peas and Parmesan and simmer for 2 minutes. Add the chives and serve.
