Ingredients
150g bow tie pasta
80g broccoli florets
¼ cucumber , deseeded and sliced into crescents
100g cherry tomatoes , quartered
1 carrot , peeled and cut into ribbons
100g tinned sweetcorn
4 spring onions , sliced
1 cooked chicken breast, diced- Dressing
2 tbsp balsamic vinegar
2 tbsp olive oil
1 tsp soy sauce
Pinch of sugar
Method
- Cook the pasta in boiling salted water according to the instructions. Add the broccoli for the last 3 minutes. Drain and refresh under cold water.
- Put into the bowl. Add the remaining ingredients.
- Mix the dressing together in a jug and pour over the salad.
